Lunch, Dinner, and Snacks

My standard salad
Romaine lettuce, spinach, loose leaf lettuce, carrots (shredded or sliced), cucumbers, blueberries, pine nuts, and flax seed.  Buy whole flaxseed and grind it fresh if you want to and add this LAST.  Flaxseed is a mucilage which means it will get slimy if it gets wet.  If you grow flax, make sure to bake it at 200 for at least an hour prior to eating it.  This is one food that must be cooked for safety reasons
My salad dressing
2 pounds of strawberries
1 leaf of basil
1 sprig of thyme (strip the leaves off and use those only)
1 avocado
1 sprig of cilantro
1 sprig of oregano
1/4-inch slice of ginger

Put all this in a blender or a Ninja and puree.  This is the consistency of yogurt but without the harmful sugars. The health benefits of these ingredients are numerous (see the herbariums on the herbs).
Peanut Butter Lettuce Wraps
It occurred to me that peanut butter can be made at home as long as everything was fresh picked so I decided to investigate some flavors.  Using loose leaf lettuce, I smeared just a dab of peanut butter on the end and wrapped it up and it was tasty.  I also tried this adding celery and asparagus (separately) and both were quite tasty.  When I can find a source of fresh peanuts, I'll experiment making peanut butter.  I plan to  use fresh, local honey to make it.

     Lettuce (Romaine and leaf work great)
     Peanut butter (recipe to follow)
     Vegetable (optional)
Dark Chocolate Nut Clusters (from Misty Torango)
     Pumpkin Seeds
     Chia Seeds
     Sunflower Seeds
     60% Dark Chocolate Chips
     Coconut Mana
     Shredded Coconut
     Almond Butter
     Honey

     She didn't measure anything and she used the freezer to make them hard.  It's hard to do chocolate on a live food diet. It would mean getting it fresh from the plant because anything in the store would be processed. I'm also not a fan of coconut or almond butter but I think it could be adapted to live without much difficulty.  Once I've had a chance to adapt it, I'll share another version.
Chocolicious
On 19 June, 2020, I wanted a sweet snack but am out of chocolate covered almonds and the store is out of them.  Crisis?  nope!  I made my own version of my sister's nut clusters from above. 

2c cacao powder
1/2 c coconut palm sugar
1/8 c cacao nibs
1/2 c coconut flakes
1/4 c crushed nuts (can use a nut flour is a person eating them doesn't eat nuts
Honey
Molasses
Coconut oil

For the last 3 items, add them last and add them to taste.  they will be sticky but putting them in the refrigerator will help them solidify if you have enough coconut oil. 
This video is me making a fermented bean paste.  This is great as a condiment in place of ketchup and then some!
Bean Paste Fajitas
Fajita or burrito shells
Provalone cheese
Bean Paste
Salsa

On one side of a shell (if you plan to fold it in half, only cover one side of the shell), place the cheese.  Break the cheese to only cover the one side if folding it. Put the paste on top. Then place the salsa. Then place another layer of cheese.  Fold the side over or place another shell on top. Heat each side so the cheese melts.

I normally use store-bought shells but I'm moving away from that.  I recently made some with my sour dough but they cannot be folded.  I plan to try putting these tings in between two breads.
Bean Paste Potatoes
I was just playing around with leftovers on this one.

Diced potatoes (I had some left over)
Salsa
Onions
Bean Paste
1 clove of garlic
Sea Salt (I use Celtic sea salt)

I heated everything up all at once, to taste.  I had so much salsa and bean paste it ended up being a bit soupy but the flavor was amazing and it was quite filling.This is just a matter of finding the ratio you enjoy.
