Breakfast

Chocolate Pancakes
1 cup spelt flour
1 /2 cup buckwheat flour
1/2 cup walnut flour
1/2 cup cacao powder
1/2 cup coconut flour
1/4 cup coconut palm sugar
2 teaspoons baking powder
2 teaspoons baking soda
3 eggs
3 cups milk (or more)
1/2 cup dark chocolate chips (optional)

Combine the dry ingredients then add the eggs.  Add the milk last and make it the desired consistency.  I say this because I make a large batch (you can reduce the amounts) and make only what I need and put the rest in the refrigerator.  This enables me to just pull out the batter and make what I need throughout the week.  Storing in the fridge dries the batter out so you will need to add a bit more milk each time you use it.  This is a hearty pancake.  My children each eat half a pancake and I only eat one.  The flours each have their own nutrients which add to the dense nutrition of this meal.
